All the tomatoes used in the production are of Italian origin and the regions which produce the greatest amount of fresh product are mainly Puglia and Tuscany.
Expert agronomists take careful care of the cultivation of the tomatoes up to their maturation following a strict quality control process and it is not by chance that Italy has won the first place in Europe and in the world for food security with the least number of food products with chemical residues beyond the permissible limits.
The tradition of preserving and bottling tomatoes goes back to the earliest times until the 60s when all the families gathered around every summer at the end of August to prepare the so-called “Tomatoes in the Bottles.”
Traditional Italian Food
This ancient Italian tradition was able to gather all the family early in the morning and each member had a clearly defined role in an assembly-line work: there were people who washed the tomatoes, those one who discarded, others who cut into slices the red product and others who crushed the pulp.
It was a great opportunity to meet and fun as well as of hard work that was usually performed in the courtyards where all the families lived the common space.
This homemade tradition has found replacement nowadays in the production of preserved food mainly carried out in Campania and many other region of the Southern Italy, where the tomato is canned with love and care and it keep all the taste and organoleptic characteristics of the fresh product.
